I'm a day late on sharing some of my favorite healthy recipes for Taco Tuesday, but any day can be taco day, right???

Instant Pot Chicken Enchiladas

These enchiladas are amazing! And honestly, they taste even better reheated on Day 2! If you don't have an IP, you could probably make it in a dutch oven on the stove, too. Just would need to adjust the cooking times.

Slow Cooker Beef Tacos

I've used this same meat also for empanadas in the air fryer.

Turkey Taco Lettuce Wraps

This is one of my favorites for a taco meal. I make it along with Skinnytaste's guacamole recipe. And top it off with Trader Joe's lite mozzarella. I've used this meat recipe for empanadas, too.

Low Calorie "Chips"
I take a calorie friendly pita and spritz with a little olive oil. Cut up into triangles and season as desired. Then air fry (or bake if you don't have an air fryer) for just a few minutes until crispy.

  • This is my taco salad bowl.
    I have wavy bowls to make my tortilla into that taco bowl shape we LOVE.
    I use Ezekiel 4:9 sprouted grain tortillas because I can't eat wheat flour or corn.
    I bake low till crispy.
    I add chopped romaine, 3 oz taco seasoned lean ground beef or turkey or cubed chicken breast, 1/4 cup black beans, chopped red bell pepper, 1/2 chopped avocado, grape tomatoes halved, chopped cilantro, topped with salsa. Sometimes I add a sprinkle of pepper jack Daiya cheese because I avoid most dairy.
    I break apart the bowl and use it as scoops for the salad contents. I love this meal, and it's super healthy.
