I've made chickpea cookie dough before so I had the idea to try using chickpeas to make a sort of peppermint bark replacement. I blended 1/2 can chickpeas, 3 T cocoa powder, 5 T date powder, pinch salt, splash of vanilla and a few drops of peppermint oil with water to thin it out. Not amazing but it was a good snack, only used a tablespoon per rice cake
